So began “Jurgy,” the jerky company Jurgens still runs with Beth and Sichterman. They’ve since dropped the “Beef,” a decision made to more fully embrace the 117-year history of the farm Jurgens’ great-grandfather founded in Pickrell, Nebraska, and to eventually expand to other meats.
